A country pub with gastro fare is Chris Taylor's mantra when it comes to food. The head chef of the Lindisfarne Inn, at Beal, Northumberland, has a cooking style he describes as rustic with robust flavours and character.

And walking into the inn at Beal, it isn't difficult to see how Head Chef Chris Taylor's ethos is a perfect fit. This traditional inn, handily off the A1 for passing trade and the proverbial stone's throw from the stunning Northumberland coastline, is homely, yet modern. Having served his time at Newcastle College, 22-year-old Chris has worked in the kitchens of Newcastle's prestigious Malmaison and Gateshead Marriot Hotel.

He became Head Chef at Ninepennys pub in Gateshead before moving to the Lindisfarne Inn, where he has worked his way up from being Chef de Partie. There, he has created a menu with a seasonal change every six months of the core menu and a daily-changing specials board, allowing him to be creative with his locally-sourced produce.

From border-country Aberdeen Angus beef to Lindisfarne crabmeat, Chris ensures local ingredients are used wherever possible. But with a specials menu that varies every day, how does he decide what goes on it? 'It's a mixture of factors,' he says. 'You have to take into account what's in season and available, and not only what you think the customers will want to eat, but what's topical at the moment.

Campaigns such as Jamie Oliver's freerange chicken can have an effect on what people want to see on those boards. You have to indulge in a little bit of forecasting.' The current menu offers dishes such as a beef stroganoff with rice and garlic bread for 7.95 and from the specials board a wild mushroom risotto with parmesan shavings and crusty bread at only 8.95.
